As our calendars turn to October it is hard not to think about pumpkins–they are not just for jack-o-lanterns and scary halloween faces but a delicious food that can be enjoyed many different ways–below are a few fun facts:
- A pumpkin is really a squash–it is a member of the cucurbita family which includes squash and cucumbers–they are also related to zucchini’s
- Pumpkin is really a fruit-anything with a seed is a fruit, so pumpkin fits the description!
- Pumpkins are a good source of potassium and vitamin A-Pumpkins are orange because they contain massive amounts of lutein, alpha- and beta-carotene. These nutrients turn to vitamin A in the body.
