Happy 2014!
Why not start the new year off with writing about a vegetable that we all know and love–the white broccoli as we call it in our home. First a few fun facts. It is an excellent source of Vitamins C and K as well as folate. Like broccoli and cabbage, it is a member of the cruciferous family. Cauliflower contains several anti-cancer phyto-chemicals, which appears to function as an anti-estrogen agent. Kids even enjoy eating them (I have tried telling them they look like a fluffy white cloud!) Try this recipe with your little ones…
Cheesy Cauliflower
Cut 1 small cauliflower into flowerets and cook until tender. Melt 2 tablespoons butter and stir in 2 tablespoons flour. Add 1 cup milk and stir until thickened. Add 1/2 teaspoon nutmeg, 1/4 cup chopped parsley and 1 cup grated tasty cheese. Cut 4 crisp croissants in half and spoon mixture in. Serve hot.
