I wanted to start this year’s newsletter off with one of my all time favorite foods–avocado. Its smooth and rich texture adds flavor to anything you put around it. Whether adding it to a quesadilla, salad, or your favorite sushi roll there is no wrong way to enjoy it. Avocados are also a wonderful introductory food for toddlers–no teeth required!
Avocados are a great source of monounsaturated fats, potassium, folate and fiber-this makes them a great source for reducing bad (LDL) cholesterol and increasing good (HDL) cholesterol. Another interesting fact is that they are gluten free, dairy free, vegan, vegetarian and cholesterol free!

3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
